Ricotta Scanta

Those of you who know me know that I love cheese. I also love old-style Italian food, not the fusion Italian food all around Seoul--where the international epicurean withers. Seoul, where I live, has great Korean food but I like the heavy, bad for you type of Italian food like eggplant parmigiana, deep fried zucchini flower, and pizza fritas with ricotta and the ultra-charged ricotta scanta. This kind of cheese is amazing. It is the kimchi of Italian food. It is as stinky as any French cheese. It is great!
